Two Ingredient Pumpkin Muffins
This two-ingredient pumpkin muffin recipe is one of those. When the kids have friends over, or for a quick hot breakfast, this is perfect! Yes, this is 'that' easy recipe showing you how to make pumpkin muffins using cake mix.
I always have the ingredients for this in my pantry. It's just a box of spice cake mix and a can of pumpkin. Make sure you are buying the 15 oz six and that it's not pie filling!
Every fall, this recipe goes crazy. But, it's an all-year recipe. When aren't the kids hungry??

Pumpkin muffins have two ingredients. It seems like overkill to do the step by step but why not! The main thing is, get your favorite red bowl and your favorite spoon. Do you have a favorite spoon? Here is mine:

Ingredients:
1 spice cake mix
1 can 15 or 16 oz pumpkin puree (small can, not pie filling)
Directions
Preheat oven to 325 degrees.
Mix spice cake mix together with pumpkin. Scoop into lined or well-sprayed muffins.
Bake 18-20 minutes (until toothpick comes out clean).
Be warned, the kids do like them. As evidenced by the missing muffin that went to school before I took this picture.

I'm just happy he ate something before he went to school. I couldn't help but laugh. They are just that good!

Pumpkin Muffins – TWO ingredients!
Delicious and so easy to make! Shhh, no one will know how little effort these take!
- Yield: 12 muffins
- 1 box spice cake mix
- 1 15 oz can pumpkin puree (not pie filling)
- Preheat to 325 degrees.
- Mix spice cake mix together with pumpkin. Scoop into lined or well sprayed muffin wells.
- OPTIONAL - add chocolate chips
- Bake 18-20 minutes (until toothpick comes out clean).
- Stir together cake mix and a can of pumpkin. Make sure you use the smaller can (15 or 16 oz). This makes 12 muffins which take about 18 minutes to bake. DONE!
